The Hinoura Hamono workshop forges the Tagai Tradition line, founded in 1905; the shop is still owned by the family today in Tsubamesanjo.
Hinoura Tsukasa was recognized as a Master of Japanese Traditional Crafts by the Japanese government in 2012. He currently runs the workshop with his son Hinoura Mutsumi. Their products are renowned for their extreme sharpness.

- The shape, although it is still octagonal, is made thinner than usual, giving it a good grip.
- Being handcrafted, you can feel that the handle was conceived to feel great in hands. The wood has been polished to a silky smooth finish allowing you to work a long time with the knife comfortably.
- Light and balanced knife, making it easy to handle as if it was an extension to your hands.
